Ingredients:
32 ounces vegetable broth
2 eggs
1 head Bok Choy, chopped
Salt, to taste
Instructions:
- First bring the vegetable broth to a boil and reduce the heat.
- Poach the eggs for 5 minutes in the broth and remove them into 2 bowls.
- Now stir in Bok Choy into the broth and cook for 4 minutes.
- Then dish out in a bowl and serve hot.
